Roast Beef in the Slow Cooker

Believe it or not, I have made very few roast beef dinners. I think this is my second try at it and I decided to use one of my favorite appliances, the slow cooker. I went to a good source for all things slow cooker, the Fix it and Forget it book.


Place roast in slow cooker and add beef broth or stock. I pierced the roast several times and inserted pieces of garlic cloves. I then sprinkled it liberally with salt, freshly ground pepper and some steak spice. I then cooked the meat on low for approximately 8 hours.

About an hour before I wanted to eat it, I could see that there was a lot of liquid in the container, so I took that out and saved it for the gravy (which was delish!)

You can see the garlic slivers in the slices of meat.

I added a few roasted vegetables and some mashed potatoes and the meal was complete.
