Barbecue Chicken Pizza

While at my friend Bev's earlier this summer, I had a delicious barbecue chicken pizza. Here is my attempt re-create it:

Saute onions and peppers

Brush pita shells or pizza shells with barbecue sauce

Add vegetables and barbecued chicken (cooked)
When we were having barbecued chicken one night, my friend Bev barbecued enough chicken for two meals which meant we had extra for the pizzas.

Sprinkle cheese on top: I used gruyere, but you can use cheddar, mozzarella, etc. I sprinkled oregano on top.

I baked them in our toaster oven (outside) at about 400 degrees f. for aprox. 10 minutes. Be sure to watch them closely as they do burn quickly (see next photo).

These were delicious, even if they were a litle scorched around the edges

  1. You can bake them in the BBQ as well. If your BBQ has a thermometer on it, you can keep it to about 350 degrees it works really well
