Back in the spring I attended a scrapbooking weekend at Sunnybrae Bible Camp, where I enjoyed excellent meals. I walked away from the retreat with a lot accomplished and inspired to try a few new meal ideas. Here is one of them:

One morning we were served baked egg cups. I had some leftover ham, so tried this for dinner.

I lightly greased the muffin cups and placed the ham inside

I then added an egg to each ham cup

I then added cheese, chives, and salt and pepper. Of course there are so many variations to try. If you don't use all of the muffin cups, fill the empty ones with water to ensure even baking.

Bake in a 350 F. oven for about 15-20 minutes or until eggs are cooked and lightly browned.
