Anna's Quesadillas

If you are like me, you have tried several quesadilla recipes. This is a new one from Anna Olsen and I was eager to give it a try.


I started with 8 flour tortillas and 8 oz of softened cream cheese. Spread the cream cheese evenly on each tortilla. I took one can of black beans and washed and drained them. Sprinkle black beans over each tortilla.

Sprinkle crumbled bacon (I have just started using packaged bacon that is pre-cooked and pre-crumbled. I must say, that is just so much easier!)

Add chopped green onions

Sprinkle cheddar cheese on one side of tortillas

Fold each tortilla in half, pressing to seal


Put a tablespoon of oil in a large frying pan and pan fry for several minutes on each side, until browned. Alternatively, you can put all of the quesadillas on a pan with parchment paper and bake in an oven at approx. 375 degrees (F) until brown.

We ate these for supper and then had some for leftovers the next day. They were delicious!
