3/4 cup firmly packed brown sugar
1/2 cup sugar
1 egg
1 tsp. vanilla
1 1/2 cup flour
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
3 cups Oats (old fashioned)
1. Heat oven to 375 degrees f.
2. Beat together margarine and sugars until light and fluffy.
3. Beat in egg and vanilla.
4. Combine flour, baking soda, salt and cinnamon; add to margarine mixture, mixing well.
5. Stir in oats. Drop by rounded tespoonfuls onto ungreased cookie sheet.
6. Bake 8-9 minutes for a chewy cookie. Cool 1 minute on cookie sheet; remove to wire cooling rack. Store in tightly covered container.
Variations: Add 1 cup raisins or chocolate chips
Cook's Notes:
I recommend using parchment paper on your cookie sheets.
I use a small ice cream scoop to put the dough on the paper. It is easy to use and the cookies are uniform.
This recipe is easily doubled.
Involve children in whatever they are able to do. Recently I had our 11 year old daughter prep all of the dry ingredients for me. As I was doubling the recipe, it involved some math on her part and we had a mini lesson on fractions.
