I am pretty sure I am not the only one who wonders, "What am I going to make for dinner?" For the last several days, we have been eating leftovers from a big celebration on the weekend, so dinners have been very easy. Tonight as I peered into the fridge, looking for inspiration, I noticed a block of cream cheese that was about to expire. Hmmm...not sure if that is supposed to be inspiring in terms of creativity, but it was inspiring in terms of my frugality.
I immediately thought of a pasta sauce and took a quick trip to my computer where I searched for pasta sauce using cream cheese. I was directed to a Kraft Canada website, which incidentally has a fairly good search engine when you are looking for recipes with specific ingredients. My eyes fell upon an easy sauce that used cream cheese, milk, and Parmesan cheese. It was very easy to make and tasted great. You can add any special ingredients that you might have on hand (ham, bacon, vegetables, etc.). I sauteed some mushrooms, onions, and peppers, which I added on top, and it was delicious! If you have some cream cheese to use up, this is a good recipe to try.
Ingredients
1 pkg (8oz) cream cheese (light or regular)
1 cup milk (I used 1%)
1 cup Parmesan cheese
nutmeg, salt, and pepper to taste
Pasta (gluten-free or regular - I used 16oz or 454g of rice pasta)
Method
Cook pasta according to package directions.
Put cream cheese and milk in saucepan. Warm on low, stirring once cream cheese is melted. I found it was easy to use my flat whisk, but any will do. Add in Parmesan cheese. Season with nutmeg, salt, and pepper.
Once pasta is cooked, drain thoroughly and add to sauce, stirring well to coat.
If desired, top with sauteed vegetables, fresh herbs, etc.
