Not every meal is going to be super fancy and that's okay. Easy comfort food can be a real blessing to you and to your family. Here are two simple meals that I have enjoyed in the last few days, using make-ahead food:
This was a super easy, yet really tasty meal. I had egg muffins in the freezer, so I defrosted them in the microwave and then heated them in the toaster oven. Prior to doing that, however, I found one potato (yes, one!) and made some homemade french fries. (I tossed the fries in olive oil and seasoned with seasoning salt and pepper, and roasted them in the toaster oven at 425 degrees). The finishing touch was the cheddar cheese on the potatoes. For very little effort, this tasted delicious!
It was about 15 minutes until dinner time and I hadn't prepared anything...I pulled out a container of Pumpkin Cheddar Soup from the freezer, along with some store-bought flat-bread pizza. The flatbread takes about 12 minutes to bake in the toaster oven, and yes, I realize that if you are cooking for a family, this amount is like the appetizer (!) and you would need to use the oven. Regardless, neither one took very long to heat/re-heat and soon dinner was ready.
It makes a lot of sense to me to have some prepared food in the freezer, and that can include both homemade and store-bought :)
