This is a super easy recipe that I have had for years. It takes very little time to put it together and is a great make ahead. I love to have these in my freezer as they are a quick and healthy alternative to so much else I could eat when I have little time for meal prep, but need to figure out a meal. You can also vary the ingredients and spices, based on what you or your family likes. The burritos can be baked from frozen or taken out the night before to thaw and then baked the next day.
Combine 2 can black beans, rinsed and drained; 1/2 cup salsa, 1 can chopped green chili peppers (optional); 1/2 a red onion, chopped; and salt and pepper (to taste).
Add 1 cup shredded cheddar or nacho cheese blend and mix to combine
Add 1 cup yellow peppers (optional)
Place a small amount (about 1/2 cup) of bean mixture on tortilla and roll up, tucking in the sides.
These can be wrapped in plastic, put in a freezer bag and put in the fridge or freezer to be used later on or you can make it now by putting them in a 9 by 13 pan and baked for 20 minutes at 350 degrees f.
I made mine for the freezer. I take a couple out at a time and thaw in the fridge or bake frozen. The baking time will vary, especially if frozen.
Bake approximately 20 minutes at 350 degrees F. You can use a higher heat as well, checking after about 20 minutes.
You can top it with cheese, if you like
And serve with sour cream and salsa
