Have you ever made your own balsamic reduction? It is super easy and definitely worth the time it takes. The taste is amazing! Put simply, you pour some balsamic vinegar in a pot and bring to a boil; turn down low and simmer until reduced by about half, for about 15-20 minutes. It will coat the back of a spoon easily and it will have thickened. You can store this at room temperature. It is delicious on chicken and roast potatoes, or pretty much any vegetable.
I still remember a special supper in Victoria with my friend, Bev. Of course it included balsamic reduction and I have been drawn to it ever since. Inspired to use the balsamic reduction, I roasted chicken with garlic, onions, tomatoes, and peppers. I then seasoned with Italian seasoning, balsamic reduction, salt and pepper (to taste), and feta cheese.
