Goat Cheese & Blueberry Log with Balsamic-Blueberry Sauce

 If you are a fan of blueberries and goat cheese, then this is for you!  The log itself comes together very quickly, but needs to chill.  The only time involved is in letting the balsamic-blueberry sauce cook on the stove.  The recipe came from a cookbook from the library called, Great Balls of Cheese.  The recipe itself makes enough for about 12-15 people, something I did not notice until I had made it.  I made two logs, instead of one and have been sharing the logs with family, receiving rave reviews.  I will definitely be making this again.
 In a bowl, combine 6 oz. goat cheese and 8 oz. cream cheese, softened.


 Add 1 cup fresh blueberries

 Add 1 tsp. sugar

 Add 1/4 tsp. salt

 Fold together or use a hand mixer to combine

 Put onto plastic wrap and press down to make a log

 I made two.  Put in fridge to chill for at least two hours or overnight

 Meanwhile, toast 1 cup chopped pecans

 To make the sauce:  Add 1 cup sugar to saucepan

 Add 1/2 cup blueberries

 Add 1/4 cup balsamic vinegar

 Simmer until mixture is reduced by half, approximately 30 minutes

 Mine took a little longer - probably 40-45 minutes

 At this point, the sauce can be stored in a container at room temperature

 When ready to serve, roll the log in the pecans.  Then spoon the sauce over the log.  Serve with assorted crackers and/or baguette slices. I took half a roll to a picnic and then served another one the next day.  Tasty!
