It seems like we are finally having some hot weather (not that I can complain), so it seems the right time to make some Popsicles. I have a delicious recipe that I have used several times for Fudgesicles and while they are great, they are on the higher fat side as they include whipping cream. I decided to look on-line for another recipe and found an easy one that uses coconut milk. This recipe comes from the blog: The Creekside Cook. With only five ingredients, this recipe came together very quickly.
This popsicle tasted like chocolate and toasted coconut. Delish!
The five ingredients are: 1 can (13 oz) coconut milk, 1/3 cup dark baking cocoa, 2 Tb. honey (or 4Tb maple syrup), 1 tsp. pure vanilla, and a pinch of kosher salt. Combine these in a bowl and then pour into popsicle molds. You can see that I used a whisk first. Then to make sure I didn't have any cocoa lumps, I quickly used my hand blender.
Freeze until firm
I had my husband take a few photos of me with my popsicle and as you can see, he had me laughing!
