Microwave Ten-Minute Cranberry Sauce

 I came across this easy recipe for homemade cranberry sauce from the Canadian Living Christmas Cookbook.  Fresh cranberries are available at Thanksgiving and at Christmas and they are usually on sale at this time too.  This sauce has a lot more flavour than the canned variety and it is far less expensive.  It makes about 2 cups and can be refrigerated for up to one week.

 Ingredients:
3 cups cranberries
1 1/2 cups granulated sugar
2 tsp. grated lemon rind

Method:
In 8-cup (2L) microwavable container, combine cranberries, sugar, and lemon rind; cover and microwave at High for 7-9 minutes or until cranberries pop, stirring once.
Let cool.


 Yes, that is a lot of sugar, but cranberries are rather tart

 This is what the sauce looked like after 7 minutes.  You can see that the cranberries have "popped".
