This recipe for this darling cheese ball came from my sister-in-law, Vicki who posted this on her facebook page. It just so cute I knew I had to make it. I am happy to report that it was easy to make and it tasted delicious. I will definitely be making this again!
Ingredients:
6oz cream cheese, room temp (I used an 8oz package)
2 cups cheddar cheese
3 tbsp minced onion
3 tbsp salsa
1 tsp ground cumin
2 cups nacho cheese chips, crumbled
top of 1 bell pepper for stem garnish
1. With a mixer, combine cream cheese, cheddar, onion, salsa and cumin. Mix until creamy.
2. Scoop mixture onto plastic wrap and use wrap to form a ball and chill for at least 2 hours.
3. When ready to serve, roll ball into the crushed nacho chips and place bell pepper stem on top. Serve with chips, vegetables or pretzels!
Enjoy !

You can see that I used my food processor. You can use a mixer or simply mix by hand too.
Shape into a ball and wrap in plastic wrap. Place in fridge for at least two hours.
A rolling pin works really well to crush the chips
I do not normally buy the taco chips laden with all of the seasoning and labelled, "zesty cheese", but I did buy them for this recipe as I really wanted the orange colour.
Gently roll cheese ball in chips just before serving. Place a clean pepper stem in top. Doesn't he look darling?
Contrasting taco chips look nice visually
