Let me start by acknowledging, that for the purists out there, these may not be considered true doughnuts as they are not deep fried and they do not contain any wheat. That said, for this gluten-free girl who has not tasted a doughnut in at least a year and a half, these tasted mighty fine. The recipe comes from Amanda Barker, who included the recipe in her recent Kamloops Momma magazine column. Thank you Amanda!
This recipe was easy to make, taking only a few minutes to get it ready for the oven. Of course you will want to make sure you have all of the ingredients. If you have not tried coconut flour, you may want to. It has an interesting flavour and definitely goes well with these doughnuts. I have used the coconut flour in other recipes too, including savoury ones.
Ingredients:
1/2 cup coconut flour
1/2 tsp. Baking soda
1/8 tsp. salt
1 whole egg
2 egg whites
2 Tb. maple syrup or honey
2 Tb. unsweetened applesauce
1/2 cup milk or milk substitute of choice
1/4 cup baking stevia or 1/2 cup cup sugar
Method
Preheat oven to 350 degrees f.
Wipe doughnut pan with coconut oil or other oil (I used spray).
In a medium sized bowl, mix together the dry ingredients.
In a separate bowl, mix together the wet ingredients.
Combine the wet ingredients with the dry mixture and whisk until batter is smooth and free of lumps.
Divide the batter evenly between the six doughnut molds.
Bake for 20-25 minutes until toothpick comes out clean.
Get creative with your glazes and toppings.
I have to admit, I was a little skeptical when I saw the amount of liquid in comparison to the dry ingredients, but as you will see it all worked out in the end.
As you can see, the batter is quite thick.
I borrowed this pan from my sister (perhaps I should save her a doughnut?).
If you do not have a doughnut pan, you could try this in a mini muffin pan.
After eight minutes in the oven, they were already looking puffed up
This batch was ready after 20 minutes
I let the pan cool and then gently took the doughnuts out of the pan. These are a little on the fragile side and a couple did not come out perfectly.
Fortunately I had a few good ones for the camera :)
I chose a simple topping of cinnamon sugar
I will definitely be trying these again, perhaps with a chocolate glaze.
