Fantastic Mashed Potatoes

The original recipe came to me from Sandra, a co-worker of mine from many years ago.  What I like about this recipe is it is make ahead and it is delicious!  You can even freeze it for up to two weeks.  Simply thaw in the fridge for 48 hours before baking.  I like Christmas to be as relaxing as possible, so I make just about everything but the turkey ahead of time:  candied sweet potatoes, stuffing, mashed potatoes, cheesy brussel sprouts, etc.  This way all I have to do is warm the side dishes instead of doing all of the prep on Christmas day.


Ingredients
10 large baking potatoes, peeled and cut in chunks
6-8 large cloves of garlic peeled
1-250g package of cream cheese
1-2 cups sour cream
1/3 cup butter
Salt and Pepper to taste

Method
Boil potatoes and garlic until potatoes are soft.  Drain.
Mash potatoes and garlic.  Add butter and sour cream and allow to soften/melt.  Mash and mix, adding 1-2 cups of sour cream, depending on desired consistency.  Add salt and pepper to taste.  Place in greased casserole dish and bake for 20 minutes at 400 degrees, but don't worry if you are cooking the turkey at a much lower temperature as it will just take longer, but the potatoes will be fine.  If you are making this ahead of time, allow to cool and place in fridge or freezer prior to baking.  This recipe makes 8-10 cups.
