Crunchy and Creamy Broccoli Coleslaw with Turkey Bacon

This fresh twist on broccoli salad comes from The Looneyspoons Collection by Janet and Greta Podleski, the sister duo who are famous for transforming regular recipes into great tasting low-fat versions of the same recipe.  This one was delicious and kept well in the fridge for a couple of days.  As you can see, I served it alongside homemade french fries and sesame and coconut crusted turkey strips.

Ingredients
Dressing:
1/2 cup light mayonnaise (not fat-free)
2 Tb. white vinegar
1 Tb. granulated sugar
1/2 tsp. celery seed
1/4 tsp. each salt and freshly ground black pepper

Salad
1 package (12 oz/340g) broccoli slaw mix (about 5 cups) - I used regular broccoli
6 slices turkey bacon, cooked and chopped
1 large red apple, unpeeled, cored and diced
1/2 cup raisins
1/2 cup packed shredded light old (sharp) cheddar cheese
1/3 cup chopped green onions or minced red onions

In a small bowl, whisk together all dressing ingredients.  Refrigerate until ready to use.
In a large bowl, toss together broccoli slaw mix, bacon, apple, raisins, cheese, and onions. 
Add dressing and mix well.  Refrigerate for at least 1 hour before serving.
