New Learning: Adding Rolled Oats to Baked Goods

I wanted to try a new recipe for a big muffin mix, but when I looked at the 16 cups of flour, I wondered if there was a way I could cut down on the flour.  I decided to cut the flour in half and I replaced 8 cups of the flour with 8 cups of rolled oats, which I processed int the food processor, making essentially a rolled oat flour.  I was pleasantly surprised to find out that the muffins turned out beautifully.  If you have a favorite muffin recipe, I would encourage you to try to cut down the flour and replace it with ground rolled oats, making the recipe healthier.  As for me, I am looking forward to continuing this experiment with other recipes that use flour.
