Cheese Fried Zucchini

Have you been given zucchini lately?  Summer time is often when we receive excess zucchini and there is so much one can do with it.  Some of my favorites are chocolate zucchini bread and zucchini fritters, which I will try to post in the next few weeks.  We received some zucchini from our friend, Sherri and I went to work looking through my cookbooks, coming across this recipe from the Best of Bridge series of cookbooks, The Rest of The Best and more Volume 2.  This was easy to make and delicious!

 Ingredients:
1/4 cup dried breadcrumbs
2 Tb. grated parmesan cheese
2 Tb. flour
 1 tsp.  salt (garlic salt or onion salt preferred)
2 medium zucchini, sliced lengthwise in sticks
1 egg, beaten
2-4 Tb. olive oil

 Method:
Combine breadcrumbs, cheese, flour and salt in a plastic bag.  Dip zucchini in egg, then shake in plastic bag.  Using a large skillet, heat oil and fry zucchini until golden brown and crispy, turning occasionally.  Drain on paper towel and serve immediately.  Serves 4.
