This recipe comes from my friend Connie, one of the most creative people I know, especially when it comes to celebrations. Read on for a great birthday cake idea.
Connie says: This was one of the fastest, easiest birthday cakes I have ever made…and yet it drew the biggest praise!
In a deep dish pizza pan bake your favourite brownie as the base. Keep the brownie in the pan, once it is cool frost it with icing tinted red…this is the great part as you do not have to frost it smooth as it is supposed to look like sauce. With an icing bag without a tip pipe vanilla frosting around the edge for the ‘crust’ Now the fun part, adding the toppings….
For pepperoni I used chocolate coins…to get them smooth I warmed up a cookie sheet in the oven while the brownie was baking, after removing the cookie sheet from the oven I placed the unwrapped coins on the pan
pressed them gently so the Loonie or the queen would melt and make a smooth top. For black olives I sliced round black jujubes and then used a straw to cut a hole in the middle. Green and red jujubes were cut into pieces to look like tomatoes and green peppers. I added a few fish shaped candies for anchovies. I grated white chocolate was the mozzarella…it helped to warm the chocolate up slightly in the microwave so it would grate more smoothly like cheese.
