Shrimp Pesto Pizza

This is a really simple and delicious pizza, inspired by one I had at Earl's restaurant. While Earl's uses thin pizza dough, this recipe uses flour tortillas.

Ingredients:
flour tortillas
shrimp, cooked and thawed (if previously frozen)
pesto
red onions, diced
mushrooms, sliced
red peppers, diced
mozzarella or other cheese, shredded
oregano
* The toppings are really up to you, depending on what you like on your pizza.

Instructions:
  1. Preheat oven to 400 degrees f.
  2. Line pans with parchment paper and put tortillas on the paper.
  3. Sprinkle cheese on tortilla.
  4. Place approximately 4-6 shrimp on each tortilla.
  5. Place about a tablespoon of pesto on each pizza, putting it in several places on the tortilla.
  6. Sprinkle vegetables and oregano over pizza.
  7. Bake at 400 degrees f. for aproximately 15 minutes, or until golden brown on top.
