One Ingredient Banana Icecream

I came across this easy recipe on a website my cousin Tobi introduced to me. You can find the site on the right hand side of my page under the title, "Greenlitebites". I was intrigued with the concept of a one ingredient recipe for icecream and the idea that I could eat icecream without all of the calories.

My friend Mary made a very similar icecream, but she added fresh raspberries at the end, something I hope to try in the future.

Firstly, I sliced 3 ripe bananas, placed them in a freezer bag and froze them. Incidentally, this is a great way to store leftover bananas as you can add them to smoothies or use them in baking.

Put the frozen banana pieces into a food processor and puree.

You will see that the bananas are in tiny frozen pieces

Put the bananas into a freezer proof container and pack down. I found that the bananas quickly came together as icecream and I was able to scoop it (as illustrated).

The icecream can be enjoyed on its own or with a drizzle of chocolate sauce

I stored the remaining icecream in the freezer. It will need some time in the fridge to soften before using.
