Quick Pizza Dough

This is a tried and true recipe for pizza dough when you don't have time to wait for a 40-60 minute rise. While the dough rests for 10 minutes, you can prep your toppings so you are ready to go in a short amount of time. The recipe comes from a book called, Six O'Clock Solutions.

Ingredients:
4 cups all - purpose flour
1 (8-g) packages instant yeast (or 2 Tb.)
2 teaspoons salt
1 teaspoon sugar
Water
2 teaspoons olive oil
In large capacity food processor fitted with a steel blade, combine 4 cups flour, 2 Tb. yeast, 2 tsp. salt, and 1 tsp. sugar.


Heat 1 1/2 cups (375 ml) water and the oil (2 tsp.) until hot to the touch, 125 to 130 F (50-55 C). I heat the water in the microwave for 1 minute.

With the motor running, gradually pour the hot water mixture through the feed tube. Process, adding up to 2 Tb. cold water until the dough forms a ball, then process for 1 minute to knead.

You can see that the dough is beginning to come together, but it needs to be processed a bit longer.

This is what the dough should look like.
Turn dough out on to a lightly floured surface, cover with plastic wrap and let rest for 10 minutes.
Divide dough in half. Roll out each piece on lightly floured surface to form a 12 - inch circle. Place each in a 12-inch pizza pan. Add toppings and bake at 450 degrees F for 15 - 20 minutes until golden brown on top.
