It seems that many of us are experiencing a heat wave. In Kamloops, in the coming days, we are expecting temperatures up to 40 degrees C, and in England, they have been facing similar temperatures this last week. If you don't have air conditioning, and even if you do, you might be looking for no-cook options for lunch and supper. Salads fit really well in the heat, and for the most part, do not require very much heat. Here are a few of my favorites:
Quinoa Tabbouleh with Feta Salad - this salad is so light and fresh. If you have fresh herbs, it is even better.
Balsamic Roasted Beet Salad: This salad is so tasty! Admittedly, the beets do take time to cook, but nowadays you can purchase pre-cooked beets from the store, saving you time and heat.
Lemony Kale and Brussels Sprouts Salad - This salad is so tasty! This one requires no baking at all. It also lasts for days, in the fridge.
Indian Spiced Roasted Potato Salad with Chickpeas - If you are looking for a different kind of potato salad, this is a great one to try. I make this every summer.
Spinach Salad with Strawberries, Toasted Pecans, Goat Cheese, and Balsamic Reduction. Again, this is a light salad, that just seems to be so perfect for summer. Delish, too! You can easily buy your own balsamic reduction, too :)
