I have always been one to experiment and see what can be made ahead, especially frozen. Years ago I remember walking through the freezer section of a grocery store and seeing all of the frozen foods. The variety was immense and I decided to work on seeing what I could make that could be frozen, even if the recipe didn't specify it was a freezer-friendly meal. With this guacamole recipe, it was the same thing. I had this great guacamole recipe that I have used for years. But I'm the only one in my family who eats avocados, and I like to buy in bulk, so when they all get ripe at the same time, it means I have a lot of avocados to eat (which isn't necessarily a bad thing), and I don't want to waste food. I am happy to report that freezing this guacamole and then thawing in the fridge worked beautifully. Whether you are making this for yourself or for company, this is a great freezer appetizer to have on hand.
Ingredients
2 ripe avocados
1 clove garlic, minced
1 tsp salt
2 Tb. lemon
This is such an easy recipe: Combine all ingredients and mash or use a food processor.
This recipe is easily doubled or tripled, depending on how many avocados you have
I divided one recipe into individual portions, using freezer bags; then I froze them.
It thawed well and was delicious
