Egg Bites using the Instant Pot

 Have you tried the egg bites at Starbucks?  They taste pretty good and are great for anyone who is avoiding wheat.  I like to have them after my Saturday run, when I am hanging out at Starbucks with my friends.  One of my friends (Jen) mentioned that you can make the egg bites in the Instant Pot, and I knew I had to give it a try.  These are super easy to make and they are definitely a make-ahead (making them an instant favorite for me!).  These can be stored in the fridge or freezer and warmed up, using the microwave.  You can vary the ingredients easily, too.  The original recipe came from another blog, Plantings and Pairings.
 
We bought the egg bite silicone container and this rack.  You can use the rack for cooking hard boiled eggs, too.  You need to add 1 cup of water to the instant pot; put rack inside.  (I made these in my 6-quart Instant Pot).

You will need 4 eggs

1/2 cup cheese

1/2 cup cottage cheese

1 green onion (this one came from my garden...doesn't it look great?)

Blend for about 30 seconds.

Add 1/2 cup roasted red pepper, diced

Add 1/4 cup spinach

Pulse or blend for about 30 seconds.

Pour into molds

Cover tightly with tin foil and place in Instant Pot.

Cook for 10 minutes, using the Steam function.  Once the cooking time is up, let the the steam release naturally for 10 minutes, then release any pressure and open up your Instant Pot (being careful not to steam yourself).

They may not look pretty, but they taste great!


You can vary the ingredients very easily.  For this next batch, I used cooked frozen green peas and black beans (because that is what I had).  I also used some Garlic Plus seasoning.  These were great!

Remember, the variations are endless.  My batch that is currently cooking right now has cheddar cheese, black beans and spinach, along with some Italian seasoning.  These freeze well and of course keep very well in the fridge.

The Basic Recipe
4 eggs
1/2 cup cheese
1/2 cup cottage cheese
1 green onion
1/2 cup roasted red pepper
1/4 cup spinach
