Ingredients
2 cups flour
1 Tb. baking powder
3/4 tsp. salt
1/3 cup butter
1 1/2 cup cheddar
1 green onion
1 1/4 cup milk
If you have a biscuit recipe that you like, you can use that one. For the one above, mix the flour, baking powder and salt. Cut in the butter using a pastry blender or two knives. Mix in one green onion, diced, and the cheddar cheese. Add milk and stir until dough comes together. From there, I used an ice cream scoop to portion out the dough onto the waffle maker. You will want to preheat the waffle maker first and then, before adding the biscuit dough, spray with non-stick spray. Close the lid and lift when it beeps or is ready. You can use these right away or serve later (they can be frozen as well).
Soup is always better with a biscuit
Tonight it was super simple to make these using frozen biscuits that I defrosted and re-warmed in the microwave. To the warm biscuit, I added a pan fried egg, and topped it with a bit more cheese (!) and chopped green onion. Comfort food at its finest!
Earlier this fall I made potato pancakes, which were incredibly delicious, too! They were super easy, and like the biscuit waffles, they are freezer friendly, ready to be pulled out when you need them.
This recipe comes courtesy of Julie Van Rosendaal: 2 cups leftover mashed potatoes, 2 large eggs, 1/3 cup cream or milk, 2 Tb. butter, melted, 1-2 garlic cloves, minced, salt and pepper to taste, 1/2 cup freshly grated Parmesan cheese, 1/2 cup flour, and 1/4 tsp. baking powder.
Mix together the mashed potatoes, eggs, cream, milk, garlic, and some salt and pepper. Stir in the Parmesan cheese. Add the flour and baking powder and stir until combined. Preheat the waffle iron and spray with nonstick spray before adding the batter. Follow directions above for cooking.
