Who doesn't like the idea of eating cookie dough? (Or is it just me?) I like to have these on hand for a quick snack in the later afternoon before I leave work. I freeze them in mini snack bags of two; pop them in my lunch, and enjoy them at work. The recipe comes from The Oh She Glows Cookbook by Angela Liddon and it is gluten-free, raw/no-bake, and refined sugar-free.
Ingredients
1 1/2 cups gluten-free (or regular) rolled oats
2 Tb. coconut oil
2 Tb. smooth peanut butter (almond butter or sunflower seed butter can be used)
1/4 cup pure maple syrup or other liquid sweetener
1 tsp. pure vanilla
1/2 cup almond flour or almond meal
1/4 tsp. fine grain sea salt
2 Tb. mini dark chocolate chips or chopped dark chocolate
Blend the oats (1 1/2 cups) until a fine flour forms. Set aside.
In large bowl, combine the 1/4 cup maple syrup,
2 Tb. peanut butter,
1 tsp. vanilla,
and 2 Tb. melted coconut oil
Mix until smooth
I found this at our grocery store, but it will also be at a health food store. You can also ground your own almonds in a food processor.
Add 1/2 cup almond flour, oat flour, and 1/4 tsp salt and mix again until combined.
Fold in 2 Tb dark chocolate chips (mini)
Roll the dough into small balls (about 1 Tb.). Freeze the bites for 5-10 minutes or until firm. Store the bites in the freezer in a freezer bag for quick an easy snacks.
