Classic Green Monster Smoothie

Have you jumped on the morning smoothie band-wagon?  A lot of people have, and I must admit that I am a newbie.  The thought of combining vegetables, fruit, and almond milk did not exactly instill confidence in me, but I have to say that I am enjoying this new recipe immensely.  This comes from the following cookbook:

This recipe uses 1 cup spinach or kale, along with a frozen banana, 1 cup almond milk, 1 Tb. peanut butter, 1 Tb. chia seeds or flax seeds, 1/4 tsp. vanilla, pinch of cinnamon, and 2-3 ice cubes.  You can also add 1/2 cup frozen blueberries.  I have been making this for several weeks and the recipe is very versatile.  This morning I was out of spinach, so added frozen berries and apples.  You can also make this ahead of time, storing it in the fridge the night before.

 1 cup spinach

 1 cup almond milk

 1 frozen banana

 2-3 ice cubes

 1 Tb. chia seeds (or ground flax seeds)

 1 Tb. peanut butter

 1/4 tsp. vanilla

 pinch of cinnamon

 Ready to be blended

 This is really tasty.  If you can find a container with a lid, it makes it easy to take it on the go and/or to store it for later.
