This is a super easy recipe, one that I put together in no time at all, for supper tonight. It tastes good, uses every day pantry ingredients, and is healthy too!
Ingredients
2 chicken breasts, thawed and sliced into chunks
1 Tb. olive oil
1 jar tomato sauce, 700ml.
1 can white kidney beans, rinsed and drained
1 onion, chopped
2 garlic cloves, minced
1 carrot, diced
2 tsp. Italian seasoning
1 cup brown rice
2 1/2 cups water
Method
1. Rinse rice until the water runs clean. Combine water and rice in rice cooker and cook.
2. Heat olive oil and onion in large saucepan over medium heat. Add diced carrots and garlic. After about five minutes, add chicken breasts. Saute until cooked through.
3. Add tomato sauce, white kidney beans, and Italian seasoning and simmer for 10 minutes or until rice is cooked.
Serve over brown rice. Garnish with Parmesan cheese, if desired.
Feel free to add additional vegetables that you may have on hand.
