Have you been to the Chopped Leaf restaurant? My sister introduced me to their healthy and delicious menu and I have very much enjoyed their whole bowl #1, which includes black beans, salsa, romaine lettuce, avocado, cheddar cheese, and sour cream on a bed of Basmati rice. You can also add roast chicken, which I like to do.
While it is great to have a healthy "go to" restaurant when you are out of town or out of time, I did some thinking and decided I could make this tasty rice bowl at home. I got all of the ingredients together and it was a real hit with my family. The best part is that you can let people make the rice bowl the way they want. And the leftovers were great! I will definitely be making this again.
I bought two chicken breasts and roasted them until cooked through; then I diced up the meat.
Black beans - always rinse and drain
I cooked up some rice in the rice cooker (easy!)
I set out all of the ingredients: green onions, salsa, sour cream,
avocado, cheddar cheese, chicken, black beans, romaine, and rice
The next step is to invite your family to come and help themselves
I followed what I have seen at Chopped Leaf: starting with lettuce and rice, chicken, avocado, and beans
Next came salsa, cheese, sour cream and green onions (Yes, this is pretty easy to put together!)

Rice
Cooked Chicken (optional)
Black Beans (one can, rinsed and drained)
Avocados, sliced
Salsa
Sour Cream
Grated Cheese
Green Onions, sliced
I must say that I have been inspired with this idea to try other ingredients too. The best part for me is that I can have all of the ingredients prepped, so it is ready to go. And as I mentioned at the top, the leftovers were great for lunches.
