These are easy to make and taste delicious! They are great for children's lunches and tasty enough for adults too! I have been making these for years, but this batch was made by my teenage daughter. They can be eaten right away, refrigerated for later, and even put into the freezer. And did I mention that they require no baking? Yes, these are great!
Ingredients
1 1/2 cups each: cornflakes, crisp rice cereal (use gluten-free cereal, if desired)
1/2 cup chopped peanuts (optional)
3/4 cup corn syrup
1/4 cup packed brown sugar
1/2 cup peanut butter (we use natural)
Topping:
1 cup chocolate chips
1/2 cup peanut butter
Method
In large bowl, combine cereals and peanuts (if using). In small saucepan, heat corn syrup with sugar just until bubbling, stirring to dissolve sugar. Remove from heat and add peanut butter; stir until smooth. Pour over cereal and mix well. With greased hands, press firmly into buttered 8-inch (20cm) square pan.
Topping: In small saucepan over low heat, melt chocolate chips with peanut butter, stirring until smooth. Spread over mixture in pan. Chill until firm. Cut into small squares.
As mentioned above, you can refrigerate these for later or store at room temperature if eating the same day. For lunches, you can freeze squares in plastic bags. The frozen squares are thawed by lunch time.
