Do you remember good meals that you have enjoyed from years past? I sure do! I remember a delicious thin crust shrimp pizza at Earls restaurant many years ago. Since that time I have made many different variations and this is one of them. This recipe comes together rather easily as it uses purchased tortillas and pesto sauce, saving time on preparation. If you are avoiding wheat, you can do what I did and buy gluten-free tortillas. I must admit that mine were bought on clearance as they were looking a little freezer burned. They turned out beautifully in this recipe, so if you have some tortillas in your freezer that need to be used, this may be a recipe for you.
In case you are confused by the two different looking pictures, I added fresh tomatoes from our garden to the pizza as it came out of the oven. As always, feel free to improvise with what you like to eat and/or have available.
Ingredients
2 small onions, chopped
2 peppers, chopped (any colour)
6 tortillas (gluten-free or regular)
cooked shrimp (about 340g)
Havarti cheese, grated (600g)
Pesto sauce (about 2/3 cup)
Feta cheese, crumbled (3/4 cup - optional)
Oregano (optional)
Method
Preheat oven to 425 degrees F. Saute onions and peppers with 1 tsp. olive oil over medium heat for about 10 minutes. Place tortilla shells on parchment paper lined cookie sheets.
Divide pesto sauce between the 6 shells and spread evenly. Top with Havarti cheese. Divide shrimp among the tortillas. Sprinkle the pepper and onion mixture on top. Add feta cheese and sprinkle liberally with oregano, if using.
Bake for 10 minutes. Switch pans in the oven and continue baking for 10 minutes. Take out of oven and let sit for 5 minutes. Enjoy!
If you are like me and did not thaw your shrimp ahead of time, you can do so easily by pouring cold water over them and letting them sit for several minutes. If your shrimp still have the tails on, be sure to remove!
You can use a different cheese - depending on what you have on hand. I looked in my freezer to see what kinds of white cheeses I had, and saw Havarti.
Sauteing the vegetables helps as the pizzas are in the oven for a short period of time.
I love oregano on my pizzas!
So good! We enjoyed one pizza each and have leftovers for tomorrow's lunch
Not sure if you can tell, but the edges actually curl up as you bake the pizzas
