Almond Roca Candy

 This recipe comes from my Auntie Dawn who included it in a family cookbook some time ago.  Recipes are often shared among families, and my Auntie Dawn received this one from her sister, my Auntie Mars.  This is definitely something that we make every year for Christmas and I have several friends who always look for it at our Open House.  It is fairly simple to make, but I would definitely recommend using a candy thermometer.

Ingredients
1 cup butter
1 cup white sugar
1 1/2 cups sliced almonds
1/2 cup chocolate chips

 In a heavy pot, slowly melt 1 cup butter.  Add 1 cup sugar, stirring to dissolve.  Turn up heat to medium-high.  Add 1 1/2 cups sliced almonds.  Stir and cook for about 8 minutes.  


 When candy thermometer reaches 290, turn out onto buttered cookie sheet.

 I used a 9 by 13 pan covered with parchment paper

 While hot, dribble about 1/2 cup chocolate chips over top.  When they melt, smooth over entire surface.

 Cool before breaking

  1. We used to make almond roca similar to this every year when the boys were younger but haven't for quite a while. It was great.
