Strawberry Yogurt Popsicles

Are you thinking of all things icy cold?  With our recent heat wave I find myself craving something cold and today I thought of these lovely treats.  Here is a simple recipe for strawberry yogurt popsicles from Canadian Living.  This is an easy recipe and a great one to do with children.

Ingredients
2 cups hulled strawberries
1/3 cup pure cranberry juice
3 tbsp liquid honey
1 1/2 cups Balkan-style plain yogurt
2 tsp vanilla

Method
1. In blender or food processor, purée strawberries and cranberry juice; strain through sieve into bowl.
2. In separate bowl, whisk together yogurt, vanilla and honey. Add strawberry mixture and combine.
3. Spoon yogurt berry mixture into moulds and freeze until firm about 3 hours.


Have you noticed the popsicle makers that only take minutes to freeze popsicles?  There are some that are quite expensive, but I came across this one at Winners for $12.99.  In about 10 minutes the first four popsicles are made and then I can make another batch before the unit needs to be put back in the freezer.  This is quite fun to do with children as the popsicles literally freeze in the unit while it sits on the counter.  I did learn however, that not all popsicle recipes work in a maker like this.  I made fudgicles that did not work as they are not as solid as other popsicle recipes.
