Apple Pancakes

This recipe comes from Claire Johnson and was in a church cookbook, where you can always find good recipes. It was fairly easy to make (by my standards - I've been told by my husband that what I consider "easy" is not easy to others) and delicious! I suggest you make this when you have people to share it with, otherwise you may have difficulty stopping at just one piece.




Ingredients:

3 eggs, separated, 2 Tb. butter, 1 tsp. cinnamon, 5 Tb. sugar (divided), 1 or 2 large McIntosh apples, 3 Tb. flour, 1/4 tsp. baking powder, pinch salt, 3 Tb. milk

Method:

Melt butter in a 10 inch ovenproof frying pan. Combine the cinnamon and 2 Tb. sugar; sprinkle evenly over butter.

Peel, core and slice apple, arranging slices over sugar/cinnamon mixture. Simmer over low heat for 5 minutes.

Combine flour, baking powder and salt with egg yolks and milk, mixing just enough to blend.

Beat egg whites until foamy, gradually adding remaining sugar. Beat until soft peaks form. Fold into flour mixture.

Pour batter over apple slices spreading to edge of pan. Bake at 400 degrees F. for 10 minutes. Invert on a plate before cutting.

For brunch, add bacon or sausages. For dessert, add ice cream or sour cream.

If you do not have an ovenproof frying pan, you can do what I did and use a non-stick skillet, but you will not be able to do the final step of putting the pancake into the oven. Instead, I used a kitchen blowtorch to brown the top. This worked, but would be better with an ovenproof frying pan, which I am on the look out for.

Combine 3 Tb. flour, 1/4 tsp. baking powder, and a pinch of salt with 3 egg yolks and 3 Tb. milk, mixing just enough to blend.


Beat 3 egg whites until foamy, gradually adding remaining 3 Tb. sugar. Beat until soft peaks form.


Fold into flour mixture.




Pour batter over apple slices, spreading evenly to edge of pan.




Bake at 400 degrees F. for 10 minutes. Invert ona plate before cutting.


As mentioned above, I did not have an ovenproof skillet, so used a kitchen blowtorch to finish the process.
