Bruschetta

This delicious recipe comes from my Auntie Dawn. It is perfect for this time of year when locally grown tomatoes are readily available.

Ingredients:
2 cups finely chopped Roma tomatoes (or other variety)
1/2 cup finely chopped red onion
1-2 cloves garlic, minced
1/2 cup chopped basil (or 1 tsp. dry)
1/4 cup parsley
1/4 cup olive oil
1 Tb. balsamic vinegar
1/4 tsp. salt
freshly ground pepper, to taste
1 baguette, sliced
parmesan cheese (optional)


Mix ingredients together and let stand for 20 minutes 
 

There are several options here: Toast baguette slices under broiler on 1 side; turn over; spoon tomato mixture onto each slice. Sprinkle with parmesan cheese and broil 6 inches from heat, until cheese starts to brown.
Or
You can put the cheese onto the bread and toast before adding the bruschetta.
Or
Skip toasting the bread altogether
